Sweet raw mango pickle: Takku

Takku is a traditional Konkani dish. Sweet and sour tasty pickle is less spicy. Takku is easily made with raw mango in summer season.

  • Ingredients:
  • 2 cups grated raw mango
  • 2 cups jaggery
  • 2 teaspoons red chilly powder
  • 1 tablespoon refined oil
  • 1/2 teaspoon fenugreek seeds
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon hing (asafoetida)
  • 1/4 teaspoon mustard seeds
  • 1 teaspoon salt
  • Procedure:
  • Wash, peel and grate raw mango.
  • Cut jaggery into small pieces.
  • For tempering keep small pan on medium flame.
  • Heat oil. Add fenugreek  seeds. 
  •  Stir fry till little brown and keep aside.
  • Add mustard seeds.
  • Once seeds crackle add hing and turmeric powder.
  • Remove from the flame.
  •  Keep aside for 10 minutes.
  • Make powder of fenugreek seeds.
  • In a large glass bowl add grated mango.
  • Add jaggery, red chilly powder, salt and fenugreek powder.
  • Mix well. 
  • Pour tempering on the mixture.
  • Adjust salt as per taste.
  • Takku will get ready after 24 hours.
  •  Transfer in a airtight glass jar and refrigerate.
