Sweet raw mango pickle: Takku
Takku is a traditional Konkani dish. Sweet and sour tasty pickle is less spicy. Takku is easily made with raw mango in summer season.
- Ingredients:
- 2 cups grated raw mango
- 2 cups jaggery
- 2 teaspoons red chilly powder
- 1 tablespoon refined oil
- 1/2 teaspoon fenugreek seeds
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon hing (asafoetida)
- 1/4 teaspoon mustard seeds
- 1 teaspoon salt
- Procedure:
- Wash, peel and grate raw mango.
- Cut jaggery into small pieces.
- For tempering keep small pan on medium flame.
- Heat oil. Add fenugreek seeds.
- Stir fry till little brown and keep aside.
- Add mustard seeds.
- Once seeds crackle add hing and turmeric powder.
- Remove from the flame.
- Keep aside for 10 minutes.
- Make powder of fenugreek seeds.
- In a large glass bowl add grated mango.
- Add jaggery, red chilly powder, salt and fenugreek powder.
- Mix well.
- Pour tempering on the mixture.
- Adjust salt as per taste.
- Takku will get ready after 24 hours.
- Transfer in a airtight glass jar and refrigerate.
