Red kidney beans ( Rajma) Curry: Maharashtrian style
- Ingredients:
- 1 cup rajma,
- Oil 1 table spoon,
- jaggery 1 teaspoon,
- black salt 1/2 tea spoon,
- red chilly powder 1 teaspoon,
- sea salt 1/2 teaspoon,
- mustard seeds 1/4 teaspoon,
- hing 1/4 teaspoon,
- 1 teaspoon chole masala(dry spice powder) ,
- 1/2 teaspoon dry mango powder,
- 1/2 teaspoon turmeric powder,
- 1 Indian bay leaf,
- 3 onions medium,
- 2 tablespoons fresh grated coconut
- Procedure:
- Wash and soak rajma in a 3 cups of water overnight.
- in the morning drain all water, wash again.
- Add 2 cups water, bay leaf and 1/2 teaspoon black salt in a rajma.
- Cook for 15 minutes in a pressure cooker.
- Peel and cut onion into small cubes.
- Heat a nonstick pan on medium flame.
- Add oil in a pan.
- Add mustard seeds, once they crackle add onion cubes.
- Keep stirring onion cubes until onion turned little brown color.
- Add hing, turmeric powder, red chilly powder, chole masala one by one. (I used everest chole masala. ) Mix well.
- Add cooked rajma in the mixture.
- Add jaggery, salt, grated coconut and dry mango powder, mix well.
- Adjust as per your taste. Add water if required.
- Cook on low flame for ten minutes.
- Serve hot with rice or chapati.
- Enjoy cooking!!
