Red kidney beans ( Rajma) Curry: Maharashtrian style



  • Ingredients: 
  • 1 cup rajma,
  • Oil 1 table spoon,
  •  jaggery 1 teaspoon,
  •  black salt 1/2 tea spoon,
  •  red chilly powder 1 teaspoon,
  •  sea salt 1/2 teaspoon, 
  • mustard seeds 1/4 teaspoon, 
  • hing 1/4 teaspoon, 
  • 1 teaspoon chole masala(dry spice powder) , 
  • 1/2 teaspoon dry mango powder,
  •  1/2 teaspoon turmeric powder,
  •  1 Indian bay leaf, 
  • 3 onions medium, 
  • 2 tablespoons fresh grated coconut

  • Procedure: 
  • Wash and soak rajma in a 3 cups of water overnight. 
  •  in the morning drain all water, wash again.
  •  Add 2 cups water, bay leaf and 1/2 teaspoon black salt in a rajma.
  •  Cook for 15 minutes in a pressure cooker. 
  • Peel and cut onion into small cubes. 
  •  Heat a nonstick pan on medium flame.
  •  Add oil in a pan. 
  • Add mustard seeds, once they crackle add onion cubes.
  •  Keep stirring onion cubes until onion turned little brown color.
  •  Add hing, turmeric powder, red chilly powder, chole masala one by one. (I used everest chole masala. ) Mix well.
  •  Add cooked rajma in the mixture. 
  • Add jaggery, salt, grated coconut and dry mango powder, mix well. 
  • Adjust as per your taste. Add water if required.
  • Cook on low flame for ten minutes.  
  • Serve hot with rice or chapati.
  • Enjoy cooking!!
