Spinach rice flour Ukad (Porridge)
- Spinach rice flour Ukad:
- This is one of the traditional konkani recipe made with very few ingredients. Easy and tasty ukad is made in all over maharashtra with wheat or jowar flour. I made it with little twist of spinach paste!
- Ingredients:
- 12 spinach leaves,
- 1/2 cup sour butter milk,
- 1/2 cup water,
- 3 teaspoons rice flour,
- 1 tablespoon pure ghee,
- 2 green chillies,
- 4 garlic flakes,
- 1/2 teaspoon cumin seeds,
- 4 curry leaves,
- salt 1/2 teaspoon,
- 1/2 teaspoon hing(asafoetida)
- Procedure:
- Wash and rinse spinach leaves.
- Boil 2 cups of water.
- Add spinach leaves keep aside for 10 minutes.
- Remove spinach leaves from water and make paste.
- Add 1/2 cup water and 1/2 cup buttermilk in a big bowl. Mix rice flour, salt, spinach paste and hing powder in a buttermilk mixture.
- mix well all mixture without any lumps.
- Heat pure ghee in a pan on low flame.
- Add cumin seeds.
- Once they crackle add green chilly pieces, peeled garlic flakes and curry leaves.
- After garlic turns little brown, add butter milk mixture.
- Keep stirring.
- Add salt if required.
- Keep lid and cook for 5 minutes.
- Serve hot with dollop of ghee!
- Enjoy cooking!!!
