This is one of the traditional konkani recipe made with very few ingredients. Easy and tasty ukad is made in all over maharashtra with wheat or jowar flour. I made it with little twist of spinach paste!
Ingredients:
12 spinach leaves,
1/2 cup sour butter milk,
1/2 cup water,
3 teaspoons rice flour,
1 tablespoon pure ghee,
2 green chillies,
4 garlic flakes,
1/2 teaspoon cumin seeds,
4 curry leaves,
salt 1/2 teaspoon,
1/2 teaspoon hing(asafoetida)
Procedure:
Wash and rinse spinach leaves.
Boil 2 cups of water.
Add spinach leaves keep aside for 10 minutes.
Remove spinach leaves from water and make paste.
Add 1/2 cup water and 1/2 cup buttermilk in a big bowl. Mix rice flour, salt, spinach paste and hing powder in a buttermilk mixture.
mix well all mixture without any lumps.
Heat pure ghee in a pan on low flame.
Add cumin seeds.
Once they crackle add green chilly pieces, peeled garlic flakes and curry leaves.
After garlic turns little brown, add butter milk mixture.
