Spinach rice flour Ukad (Porridge)


  • Spinach rice flour Ukad: 
  • This is one of the traditional konkani recipe made with very few ingredients. Easy and tasty ukad is made in all over maharashtra with wheat or jowar flour. I made it with little twist of spinach paste!
  • Ingredients:
  •  12 spinach leaves,
  •  1/2 cup sour butter milk,
  •  1/2 cup water, 
  • 3 teaspoons rice flour, 
  • 1 tablespoon pure ghee, 
  • 2 green chillies, 
  • 4 garlic flakes, 
  • 1/2 teaspoon cumin seeds, 
  • 4 curry leaves, 
  • salt 1/2 teaspoon, 
  • 1/2 teaspoon hing(asafoetida)
  • Procedure: 
  • Wash and rinse spinach leaves.
  •  Boil 2 cups of water. 
  • Add spinach leaves keep aside for 10 minutes.  
  • Remove spinach leaves from water and make paste. 
  • Add 1/2 cup water and 1/2 cup buttermilk in a big bowl. Mix rice flour, salt, spinach paste and hing powder in a buttermilk mixture. 
  • mix well all mixture without any lumps. 
  • Heat pure ghee in a pan on low flame. 
  • Add cumin seeds.
  •  Once they crackle add  green chilly pieces, peeled garlic flakes and curry leaves.
  •  After garlic turns little brown, add butter milk mixture.
  •  Keep stirring. 
  • Add salt if required.
  • Keep lid  and cook for 5 minutes. 
  • Serve hot with dollop of ghee!
