Konkan special sweet flat bread: Panagi

Panagi is one of the traditional Konkani  sweet flat bread made with the help of banana leaves.

  • Ingredients:
  • jaggery 1/4 cup
  • Milk 1/2 cup
  • Rice flour 1 cup
  • Unsalted butter 1 tablespoon
  • salt 1/4 teaspoon
  • Ghee
  • Banana leaves 8 pieces
  • Procedure:
  • Wash and wipe banana leaves
  • Cut them into 7/8" each.
  • Add crushed jaggery, salt and milk in a large bowl.
  • Mix well.
  • Add rice flour and unsalted butter.
  • Make smooth dough.
  • Add more milk if required.
  • Grease banana leaf with melted  pure ghee.
  • Put round ball of dough on greased leaf.
  • Flatten the dough in round flat shape.
  • Cover with another greased banana leaf.
  • Heat a tawa/pan on medium flame.
  • Keep Panagi with banana leaves.
  • keep lid for few minutes.
  • Change the side and cook again.
  • Serve with dollop of pure ghee or homemade butter.
  • I served with sweet and spicy mango pickle and pure ghee.
