Konkan special sweet flat bread: Panagi
Panagi is one of the traditional Konkani sweet flat bread made with the help of banana leaves.
- Ingredients:
- jaggery 1/4 cup
- Milk 1/2 cup
- Rice flour 1 cup
- Unsalted butter 1 tablespoon
- salt 1/4 teaspoon
- Ghee
- Banana leaves 8 pieces
- Procedure:
- Wash and wipe banana leaves
- Cut them into 7/8" each.
- Add crushed jaggery, salt and milk in a large bowl.
- Mix well.
- Add rice flour and unsalted butter.
- Make smooth dough.
- Add more milk if required.
- Grease banana leaf with melted pure ghee.
- Put round ball of dough on greased leaf.
- Flatten the dough in round flat shape.
- Cover with another greased banana leaf.
- Heat a tawa/pan on medium flame.
- Keep Panagi with banana leaves.
- keep lid for few minutes.
- Change the side and cook again.
- Serve with dollop of pure ghee or homemade butter.
- I served with sweet and spicy mango pickle and pure ghee.
