Bhindi (Okra) Onion Fry
- Ingredients:
- Bhindi (Okra) 500 grams
- 1 tablespoon refined oil
- 2 onions
- 2 tomatoes
- 1/4 teaspoon mustard seeds
- 1/4 teaspoon hing( asafoetida)
- 1/2 teaspoon turmeric powder
- 2 teaspoons lemon juice
- Salt 1 teaspoon
- Sugar 1 teaspoon
- Red chilly powder 1 and 1/2 teaspoon
- Fresh grated coconut 2 table spoons
- fresh coriander leaves 2 tablespoons finely chopped
- Procedure:
- Wash okra and wipe them with cotton towel.
- Make slices of okra.
- Peel and make slices of onion.
- Wash and cut small cubes of tomato.
- Add oil in a pan and heat on medium flame.
- Add mustard seeds.
- Once mustard seeds crackle add sliced onions and tomatoes.
- Stir fry on law flame for ten minutes.
- Add hing, turmeric powder and red chilly powder.
- Mix well.
- Add okra slices and lemon juice.
- Keep stirring.
- Cook okra uncovered to avoid stickyness.
- Stir fry on law flame for 25/30 minutes.
- Add salt, sugar, grated coconut and finely chopped coriander.
- Keep stirring for 5 minutes.
- Adjust salt, sugar and red chilly powder as per your taste.
- Serve hot with Chapati.
