Ragi (Nachani) semolina ladu

Ragi (Nachani) semolina ladu: 

  • Ragi is the best food option in a summer. 
  • Ingredients: 2 cups Ragi flour, 
  • 1 cup semolina, 
  • 2 and/4 cup sugar, 
  • 1 cup water,
  • cardamom powder, 
  • pure ghee 1/2 cup,
  • pieces of cashew nuts and almonds,
  • salt a small pinch.
  • Procedure: 
  • Add semolina in a large pan. 
  • Roast for five minutes on medium flame.
  •  Keep aside.
  •  Add ghee and ragi flour in a pan.
  •  Roast ragi flour for five minutes on medium flame. 
  • Add roasted semolina in a pan and roast the mixture on law flame for ten minutes. 
  • Remove flame.
  • In a deep pan add sugar and water and keep stirring on medium flame. 
  • Boil the syrup till one thread consistency. 
  • Add pinch of salt and cardamom powder. 
  • Add pieces of cashew nuts and almonds. 
  • Then mix roasted ragi flour and semolina in the syrup. 
  • Mix well. 

  • Keep aside for an hour. 
  • Keep stirring occasionally. 
  • When mixture becomes ready to make round balls, make round balls(ladu) applying ghee on hand palm.
  • I made 30 ladus from the mixture.
