Mango Modak:
Modak is Lord Ganesha's most favorite food. One more konkani sweet dish with mango.. Modak:
Procedure: For stuffing: 1)Take 2 bowls grated coconut, 2 bowls mango pulp, half bowl sugar in a large pan.
2) Put it on a low flame.
3) Stir it continuously till the mixture becomes thick, add cardamom powder.
4)Turn off the flame.
5) Allow it to cool.
6)To Make the outer covering boil 2 1/2 bowls water and half bowl mango pulp.
7)Add 2 tsp unsalted butter and half tsp salt to taste.
8)Once the water starts boiling add rice flour, Stir well.
9) Keep it covered for five minutes on low flame.
10) Knead the dough when its warm.
11) Use little oil and cool water if necessary to make a soft dough.
12)Keep the dough covered.
13)Make a small ball of the dough.
14)Spread it evenly with hands and make a bowl. Hold it in your left hand, add two tsps stuffing.
15) pleat the edges of the dough and gather them together. Pinch to seal at the top.
16) Heat sufficient water in the steamer.
17) place banana leaves in a plate.
18) Place modak over banana leaves, cover properly
19) Steam for 15 minutes.
20) Serve with desi ghee.
