This is a traditional konkani recipe.The chillies are stuffed with spices and then sundried
ingredients: Green chillies 1kg,fenugreek seeds powder125 grms,mustard seeds powder 250 grms, salt 100grms, turmeric powder 50grms, asafoetida 1tbsp, cumin seeds powder 11/2 tbsp, coriander seeds 1 1/2 tbsp.
Procedure:Preferably use konkani green chillies for this recipe as they are broad and have more space for stuffing. Wash and drain chillies and wipe them dry.
Now take a large mixing bowl add mustard seeds powder, fenugreek seeds powder , salt, turmeric powder ,asafoetida, cumin seeds powder , coriander seeds powder.Mix well and keep aside.Now slit the chillies at the centre(lengthwise). stuff the masala in the chillies tightly.keep the stuffed chillies overnight,it helps for binding the mixture. Keep it in the sun for 4 to 5 days.Store it in a airtight container, it stays well for a year..
It can be best enjoyed by deep frying and can be used as a side dish...it will enhance the taste of the curry sabzi and even curd rice.
