Fried Jackfruit seeds:
This is one of the most tasty dish from konkan. When you bought ripe jack fruit keep seeds aside and dry them for one day. Jack fruit seeds are also available in a shop.
Let's try this easy and tasty fried recipe.
- Ingredients:
- 1 cup jack fruit seeds,
- 1 table spoon refined sunflower oil,
- 1 teaspoon sugar,
- 1/2 teaspoon salt,
- 1/2 teaspoon red chili powder,
- A pinch of hing(asafoetida),
- 1/4 teaspoon mustard seeds,
- 1/4 teaspoon turmeric powder,
- 1 tablespoon grated fresh coconut
- Procedure:
- Add 2 cups of water in the jack fruit seeds and pressure cook for two whistles.
- Keep aside to settle down pressure.
- Peel outer white cover of seeds.
- Cut the seeds into pieces as per your choice.
- Put the pan on medium flame.
- Heat oil in a heavy bottom pan.
- Add mustard seeds.
- Once mustard seeds crackle add hing, turmeric powder, red chili powder.
- Then add chopped jack fruit seeds.
- Stir jack fruit seeds.
- Add salt as per taste.
- Add sugar and grated coconut.
- Mix well and then put lid for 5 minutes. Remove from the flame.
- Serve with roti(Indian flat bread).
