Karvand / Karonda(Carissa) pickle:
Karvand is a small black fruit. Karvand is mainly found in western ghats area specially in konkan. Fruits grow in summer ( march to may). Pickle is made out of these raw fruits.
How to make: Rinse karvand two times in water. Dry with cotton towel. Make a small cut in the karvand. Add two tablespoon salt in warm water. Soak the karvand in salted water for two hours in order to remove white shriek which comes after cutting. After two hours drain water and dry it with cotton towel. Heat oil in small pan. Fry fenugreek seeds. Allow it to cool. Make powder of fenugreek seeds and mustard seeds.
Heat 4 tablespoon oil in small pan. Add 1teaspoon mustard seeds. Once they start crackling switch off the gas flame. Add asafoetida, turmeric powder and small pinch red chili powder. Allow to cool. Add this cool tempering to pickle. Keep in dry glass bowl for two days for better result. Enjoy summer!!😊
