Indian desert : Wheat kheer


Ingredients:

Wheat 1/2 cup,
Jaggery 1/2 cup,
Grated coconut 1/2 cup,
8/10 cashew nuts chopped into pieces,
8/10 almonds chopped into pieces,
Ghee two teaspoons,
Nutmeg powder 1/2 teaspoon,
Cardamom powder 1/2 teaspoon,
Dry ginger powder 2 teaspoons,
Salt one teaspoon,
Water 1 and 1/2 cup,
Coconut milk or regular milk 1 cup


Procedure:

1)   Wash and soak 1/2 cup wheat in a cup of water for 2 hours.
2)   Drain out all water and spread them on a cotton towel for half an hour.
3)   After half an hour crack them roughly by using grinder.

4)   Add 1 and 1/2 cup water in a cracked wheat,  transfer the mixture in a pressure cooker.
5)   Put a lid & cook for 7/8 whistles.
6)   After 10 minutes open the lid of cooker.
7)   keep deep pan on  medium flame.
8)   Add ghee in the pan, stir fry cashew nuts and almond pieces, keep aside. Then add cooked wheat.
       Keep stirring.
9)   Add grated coconut, jaggery, dry ginger powder, nutmeg powder, cardamom powder.
10) Add salt to taste.
11)  Add one cup coconut milk or regular milk to adjust consistency.
12)  Keep stirring for 5 minutes. 
13)  When kheer start boiling turnoff gas flame.
14)  Transfer kheer in a glass bowl.
15)  Garnish with cashew nuts and almond pieces.
16)  kheer is ready, Serve it hot or cold.
