Red Amaranth Stir Fry


  • Red amaranth is nutritious vegetable.This  vegetable made in  almost all parts of Maharashtra. 
  • Ingredients:
  • 4 cups red amaranth leaves
  • 2 medium onions
  • 1 tablespoon oil
  • 3 dry kokum
  • 1 teaspoon jaggery
  • 4 dry red chilies
  • 1/4 teaspoon mustard seeds
  • 1/4 teaspoon hing
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chilly powder
  • 1 table spoon fresh grated coconut
  • Salt to taste
  • Procedure:
  • Wash and rinse red amaranth leaves two three times.
  • Chop leaves finely.
  • Peel and chop onion.
  • Heat oil in a pan.
  • Add mustard seeds.
  • Once they crackle add dry chilies and finely chopped onion.
  • Stir well and cook for 5 minutes.
  • Add hing, turmeric powder, red chilly powder, stir well.
  • Add finely chopped red amaranth leaves.
  • Add 1/2 cup water and kepp lid.
  • Cook for 10 minutes on low flame.
  • Add jaggery, salt 1/2 teaspoon, dry kokum and grated coconut.
  • Stir well and cook for two minutes.
  • Adjust red chilly powder and salt as per your taste.
  • Serve hot with chapati or rice.
  • Enjoy cooking!!!
