Red Amaranth Stir Fry
- Red amaranth is nutritious vegetable.This vegetable made in almost all parts of Maharashtra.
- Ingredients:
- 4 cups red amaranth leaves
- 2 medium onions
- 1 tablespoon oil
- 3 dry kokum
- 1 teaspoon jaggery
- 4 dry red chilies
- 1/4 teaspoon mustard seeds
- 1/4 teaspoon hing
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chilly powder
- 1 table spoon fresh grated coconut
- Salt to taste
- Procedure:
- Wash and rinse red amaranth leaves two three times.
- Chop leaves finely.
- Peel and chop onion.
- Heat oil in a pan.
- Add mustard seeds.
- Once they crackle add dry chilies and finely chopped onion.
- Stir well and cook for 5 minutes.
- Add hing, turmeric powder, red chilly powder, stir well.
- Add finely chopped red amaranth leaves.
- Add 1/2 cup water and kepp lid.
- Cook for 10 minutes on low flame.
- Add jaggery, salt 1/2 teaspoon, dry kokum and grated coconut.
- Stir well and cook for two minutes.
- Adjust red chilly powder and salt as per your taste.
- Serve hot with chapati or rice.
