Chitranna: Raw mango rice

Chitranna: Raw mango rice:


  • Ingredients:
  •  250 grams rice,
  •  2 tablespoons oil, 
  • 2 onions, 
  • curry leaves 5/6, 
  • 1/2 teaspoon mustard seeds,
  •  1/2 teaspoon hing powder, 
  • 1/2 teaspoon turmeric powder,   
  • 2 tablespoons ground nuts, 
  • 2 tablespoons cashew nuts,
  •  1 teaspoon urad dal (skinned black gram),
  • 1 teaspoon bengal gram dal, 
  • 4 dried chilies, 
  • grated raw mango 2 tablespoons,
  •  salt, 
  • water, 
  • coriander leaves
  • Procedure: 
  • Wash  rice for two three times and keep on the strainer. 
  • Peel and chop onions. 
  • Soak ground nuts, cashew nuts, bengal gram dal in a hot water separately for ten minutes
  • . Add two cups water and 1 teaspoon salt in a rice and cook in a pressure cooker. 
  • Heat oil in a pan.  
  •  Add mustard seeds. 
  • Once they crackle add urad dal. 
  •  Stir well. 
  • Add dried chilies, chopped onion and stir well.
  •  Add soaked bengal gram dal, ground nuts, casew nuts one by one and stir well.
  •  Add curry leaves, hing powder, turmeric powder.
  •  Stir well.  
  • Add grated raw mango and 1/2 teaspoon salt.
  •  Mix well. 
  •  Add cooked rice and mix.
  •  Keep lid for five minutes.
  •  Cook on low flame.
  •   Garnish  with finely chopped coriander leaves and serve!
