Bottle gourd curry
Bottle gourd curry:
- Ingredients:
- 3 cups peeled bottle gourd cubes,
- 1 tablespoon oil,
- 1/4 teaspoon mustard seeds,
- 1/4 teaspoon hing powder,
- 1/2 teaspoon turmeric powder,
- 1/2 teaspoon red chilly powder,
- 2 table spoons grated fresh coconut,
- salt 1/2 teaspoon,
- jaggery 1 teaspoon,
- curry leaves 4/5,
- water.
- Procedure:
- wash and peel bottle gourd.
- If seeds are soft use them in the curry.
- Cut bottle gourd into small cubes.
- Heat oil in a pan.
- Add mustard seeds, hing powder and turmeric powder.
- Add chopped bottle gourd and curry leaves.
- Stir well.
- Add one cup of water.
- Keep lid and cook for ten minutes on low flame.
- When bottle gourd becomes transparent add salt, jaggery and red chilly powder.
- Add grated coconut and stir well.
- Boil for two minutes.
- Adjust as per your taste.
- Serve hot with chapati.
