Gongura / sour greens leafy vegetable
This is one of the konkan's traditional sour leafy vegetable named Ambadi. We made this vegetable with Indian bread called Bhakri!
- Ingredients:
- Gongura leaves two cups
- Tuvar dal ( arhar dal / yellow lentils) 1/4 cup,
- Rice 1/4 cup,
- Garlic cloves 10
- Dry red chilies 5
- Jaggery 1 teaspoon
- Oil 2 tablespoons
- Dried stuffed green chilies powder 1 teaspoon
- Hing 1/4 teaspoon
- Red chilly powder 1/2 teaspoon
- Turmeric powder 1/2 teaspoon
- Mustard seeds 1/4 teaspoon
- Salt 1 teaspoon
- Fenugreek seeds 1/4 teaspoon
- Procedure:
- Wash and chop gongura leaves finely, add half cup water and cook in a pressure cooker for ten minutes.
- Wash tuwar dal and rice. Cook for 15 minutes adding double water. Cook both separately.
- Peel garlic cloves.
- Cut dry red chilies into small pieces.
- Heat 1 tablespoon oil in a pan.
- Add stuffed green chilies, fry them and keep aside.
- Crush them in a mixer jar.
- Add mustard seeds, once they crackle add fenugreek seeds.
- Add hing powder, turmeric powder. Stir well.
- Remove water from gongura leaves and keep aside.
- Add cooked leaves , rice and tuwar dal.
- Add jaggery, salt to taste and red chilly powder.
- Add crushed stuffed chilly powder.
- Stir well.
- Use sour water if required which we keep aside.
- Cook for 5 minutes on low flame.
- Heat small pan.
- Add one table spoon oil.
- Fry garlic cloves and dry red chilies on low flame.
- Remove flame and add pinch of red chilly powder.
- Pour tempering over vegetable !
- Serve with hot Bhakri!!
